Zucchini bread recipe

My paternal grandmother, Ruby Lauritzen, used to make zucchini bread and share it with her children and grandchildren. Heavy with raisins and walnuts, Grandma Ruby’s zucchini bread was a favorite of mine as I was growing up, and is a dish that brings me back to my childhood when my sister and I generously smeared salty margarine on thick slices of this rich bread.

After she and my grandfather passed on, I was the lucky inheritor of her handwritten recipes. A couple of years ago, I had the recipe framed and hung it on our family photo wall, so that’s why it’s being shared in this unusual way, smudges and all.

The recipe hangs on the wall among a collection of family photos and mementos, including these pot holders that I received as a gift from two of my youngest clients, “K & E.” I used these potholders for many years until they were literally falling apart. After I burned my hand a few times, I retired them and then decided to have them framed because they mean so much to me.
